Basmati Rice Croquettes

Basmati   Rice   Croquettes    



Ingredients:

For Rice Mixture:

Boiled Rice : 1 cup
Boiled Corn : 2 tbsps
Chopped Coriander : 2 tbsps
Chopped Green Chillies : 1 tsp
Chopped Onions : 1 ½ tbsps
Salt to taste
Roasted Cumin Powder : 1 tsp
Red Chilli Powder : 1 tsp
Grated Cheese : 2 tbsps
Grated Paneer : 2 tbsps
Bread Crumbs : 2 tbsps

For Salsa :

Chopped Tomatoes : ½ cup
Chopped Onions : 2 tbsps
Chopped Coriander : 1 ½ tbsps
Chopped Green Chillies : 1 tsp
Chopped Garlic : 1 tsp
Orange Zest : 1 tbsp
Sugar : 1 tbsp
Black Olives : 4 – 5 nos.
Lemon Juice : 1 no.
Salt to taste
Crushed Black Pepper to taste

For Batter :

Refined Flour : ½ cup
Salt to taste
Crushed Black Pepper to taste
Red Chilli Powder : 1 tsp
Refined Flour, for dusting
Bread Crumbs
Oil : for frying

For Garnish :

Lettuce Leaves : 2 – 3 nos.
Black Olives : a few

Method:

1. To prepare rice mixture; in a bowl mash the boiled rice.
Chop boiled corn and add to the rice mixture.
2. Add the chopped coriander, green chillies, onions, salt,
roasted cumin powder, red chilli powder, grated cheese,
paneer, breadcrumbs and mix well. Keep aside.
3. To prepare the salsa, in a bowl add chopped tomatoes,
chopped onions, chopped coriander, chopped green chillies,
 chopped garlic, orange zest, sugar and mix well.
Chop black olives and add to the bowl.
 Add lemon juice, salt, crushed black pepper and keep it aside.
4. Make a batter by mixing together refined flour, salt,
crushed black pepper, red chilli powder, water in a separate bowl.
5. Make balls out of the rice mixture and dust them with refined flour.
Gently roll the balls in the batter and finally coat them with breadcrumbs.
6. Deep fry the prepared croquets in hot oil until golden
brown and drain excess oil on a tissue paper.
7. Serve the salsa in a bowl. For garnish, trim the lettuce leaves
and place them on the serving plate. Keep the prepared croquettes on them.
 Arrange black olives on skewers and top the croquettes with them.
8. Drizzle salsa and your rice croquettes are ready to serve.
