Makhane Ki Kheer ( Lotus Seeds Kheer )

Makhane Ki Kheer  ( Lotus  Seeds  Kheer )


Ingredients

1 cup lotus seeds (makhanas)
5 cups milk
2 tbsp ghee
3/4 cup sugar
1/2 tsp nutmeg (jaiphal) powder
3 to 4 saffron (kesar) strands
1/4 spoon elachi pd

For The Garnish
1 tbsp soaked pistachio slivers
2 to 3 sliced glace cherries - optional
Few badam n kaju for garnish
1 edible silver leaf (vark) - optional

Method

1. Heat the ghee in a pan, add the makhanas and saute for 3 to 4 minutes till they are crisp.
2. Remove from the fire and crush them slightly.
3. Heat the milk in a heavy bottomed pan. Add the sugar, mix well, and simmer till the sugar dissolve, while stirring continuously.
4. Add the crushed makhanas and simmer for about 15 to 20 minutes.
5. Add the nutmeg powder , elachi powder and saffron. Mix well.
6. Remove from the flame.
7. Garnish with the badam, kaju, pistachios, glaced cheeries and silver leaf.
8. Serve hot.
