Dahi Gujiya

Dahi Gujiya


Ingredients

Urad dal - 200 gms. (1 cup)
Salt - 1/3 tea spoon.
Raisins - 25-30
Calumpong Nut (chironjee)  - 1 table spoon.
Cashews - 15 (chopped)
Oil - to fry gujiya.
Curd - 1 kg. (4 cups)
Salt - 1 tea spoon (according to the taste)
Green chutney - 1 small bowl.
Sweet chutney  - 1 small bowl.
Red chilli powder - 1 tea spoon.
Roasted cumin seeds - 2 tea spoon.
Chat masala - 2 tea spoon.

Method

Wash the dal and soak it for 4-5 hours or overnight. Now strain the excess water from the dal and put it into the mixer. Make a thick paste from the dal without adding water in it.
If you think that your dal paste is not enough thick in consistency, then add little gram flour to it and mix well.
But if you will put too much gram flour into the dal paste, then you won't be able to make smooth gujhiya.
Take out the dal paste in a bowl and knead with hands. The mixture to make ghujiya is ready.
Mix the cashews, raisins and chironjee together.
Heat oil in a pan.
Take a bowl with a diameter of 3 inch. Place a cloth over it and hold it tightly from behind. Take a small portion of the mixture equal to the quantity of a lemon and roll into a round ball. Now press this ball with wet fingers making a flat disc of 21/2 -3 inches. Put 1/2 tea spoon nuts mixture
over the rolled out gujhiya and fold it from one side in a shape of half moon. Ghujiya is ready to fry.

Alternative way to make ghujiya: 
Spread a wet cloth on the rolling board and pour the dal mixture over it. Make a flat disc from the mixture into a flat disc of 21/2 - 3 inches Put the nuts on it and fold from one side by flipping the side of the cloth.
Heat oil in a pan upto a desired temperature. Meanwhile prepare one more ghujiya in the same manner. Put both the ghujiya into the pan and fry until they turn brown from both the sides.
Prepare all the ghujiya in the same manner.
Strain water from the curd with the help of a strainer. Whisk the curd and add salt to it.
Take a deep vessel and pour water into it along with salt. Now dip all the ghujiya into the water .
Within 20-25 minutes the ghujiya will rise. Take it out from the vessel and press with hands to strain water from it. Repeat the step with all the ghujiya and put the on the plate.
Dip each ghujiya into the curd and place on a serving plate. Garnish with roasted cumin seeds powder, red chilli powder and chat masala. Urad Dal Dahi Gujiya is ready to be served.
