STUFFED BOMBIL
Ingredients :
4 large ( thick) bombils boneless. ( remove vertically bone)
2 spoon of vinegar or tamarind paste thick , chilly powder, haldi powder a pinch ,
paste garlic -chillies - ginger, salt a pinch ,white pepper pd ,
Rice flour 2 spoons, 3 spoons wheat flour, 1 1/2 spoon cornflour , 1 spoon of besan ,a pinch of salt,
Oil for frying.
Stuffing :-
• 1/4 cup large prawn, deviened , washed
• 1 red chilli, halved and seeds removed (opt)
• 1 tbsp water
• half an onion, chopped
• 2 sprigs curry leaves chopped
• For ground spice:
• 1 tsp garlic paste
• 1 tsp ginger paste
• 1/2 or 1 tsp fresh green chilly crushed (as per ur taste)
• 3 tbsp fish curry powder (everest company or any of ur choice.)
• 1/2 tsp salt .
Method:-
• Heat a pan , chopped onion and curry leaves chopped until fragrant.
• Add combined ground spice ingredients.
• Add marinated chopped prawns. Stir well to mix
• Then add water to cook .
• Cover and cook till almost dry and prawns are fully cooked.
• Lastly, add in seasoning and adjust to taste. Cool at room temp.
• Add little coriander as per ur choice to taste.
Preparation :
Clean the bombay ducks, apply salt and keep under some weight for an hour or two hrs if possible
or so to allow the water to drain out completely.
Wipe dry with tissue or cotton cloth .
Remove centre bone. Stuff with above prawns masala cover with other piece of bombil
take a dry dish and put all above dry flour ( wheat flour , besan ,rice flour and cornflour and coat the dish well.
Slowly lift with both hands and put it in non stick pan and put oil and cook brown both the side.Turn with wooden spatula.
Enjoy hot stuffed bombil
