Dryfruits Loaded Sweet N' Spicy Kachori

Ingredients

Boiled potatoes -4
Salt- 1/2 tspoon
Arrowroot or corn flour - 2tbls

Stuffing

Grated fresh coconut - 4 tbls
Chopped green chillies - 2
Grated ginger -1 tspoon
Roasted and chopped kaju, badam , pista - 2 tbsp each
Few golden raisins,
Pods of 2 cardamom seeds
Fresh coriander- 3 tbls
Lemon juice -1.5 tsp
Sugar- 1 spoon
Salt as per taste
Poppy seeds roasted 1/4 spoon
Roasted jeera powder 1/4 spoon

Method

1. Take a bowl, add boiled and mashed potato salt and arrowroot, mix well
2. Mix grated coconut and all the ingredients of filling in a bowl (don't add salt in the filling ) .
3. Grease your palms and take a small ball of potato mixture and flatten it.
4. Stuff with coconut mixture and seal properly, and roll in dried cornflour or arrowroot.
5. Heat oil in a pan and deep fry these kachori's on medium heat till golden brown in colour.
6. Drain on a tissue paper and serve hot.
7. Serve with dates chutney or mint chutney or plain curd.
