Pineapple Chicken

Pineapple Chicken

Ingredients

300 gms diced chicken
2 tsp soya sauce
1 tsp black pepper powder
Salt to taste
2 tsp corn starch
¾ cup pineapple juice
4 tsp vinegar
3 tsp brown sugar
½ tsp soya sauce
1 tsp corn flour
Salt to taste
4 tbsp refined flour
½ tsp baking powder
Salt to taste
1/2 tsp black pepper powder
2 tsp oil
¼ cup soda water
Oil to deep fry
1 tsp oil
½ cup diced red bell pepper
½ cup diced pineapple
½ cup diced green bell pepper
¼ cup diced green onions


For garnishing

Green onions as required

METHOD

Take chicken and marinate it with soya sauce, black pepper, salt and corn starch. Keep it aside for marination for 15-20 minutes.
Pour three fourth cup of pineapple juice in another pan.
Add vinegar, brown sugar and some soya sauce. Bring it to boil.
Take some corn flour and add some water.
Add starch and salt to the other pan. Heat it.

To prepare the batter

Take some flour and baking powder.
Add salt and black pepper powder to this and mix well.
Add some oil.
Now add soda water and prepare a thick batter.
Now, dip the chicken cubes into the batter and deep fry the cubes in medium hot oil.
Take the chicken pieces out on a tissue paper to drain off the oil.
Now heat another pan/wok on high flame.
Now add some oil.
Then add red capsicum, pineapple pieces and green capsicum. Cook for around 10 minutes.
Add chicken, green onions and the prepared sauce.
Now, toss the ingredients well and take it out on a plate.
Garnish with green onions and serve.
