Matki Usal

 Matki Usal

Ingredients


Sprouted matki beans 1½ cups
Oil 2 tablespoons
Onion 1 medium
Asafoetida 1/4 teaspoon
Mustard seeds 1/2 teaspoon
Cumin seeds 1/2 teaspoons
Curry leaves 8-10
Turmeric powder 1/4 teaspoon
Salt red to taste
Red chilli powder 1 teaspoon
Goda masala powder 1 /1 2 teaspoon
Sugar 1 1/2 teaspoons
Fresh coriander leaves a few sprigs
Scraped coconut 2 spoon -  optional
Potatoes - optional

Method

Heat oil in a non-stick pan. Chop onion.
Mustard seeds, cumin seeds, curry leaves and onion to the pan and sauté.
Add potatoes and mix. Add turmeric powder and mix well. Add salt and mix well. Add matki and 1 cup water and mix.
Add red chilli powder and goda masala and mix. Add sugar and mix well. Cover and cook till both potatoes and matki are done.
Chop a few sprigs of fresh coriander leaves.
Transfer the usal into a serving plate. Garnish with coconut and coriander leaves and serve hot.
