SOYABEAN GAULOTI KABAB.
Ingredients
1st *masala*
2 cup soyabean, soaked for 1 hr, drained
3 spoon channa dal soaked for 1 hr, drained,
5-6 whole pepper crushed,
1/2 elachi powder,
2 spoon ginger garlic paste,
2 spoon soaked khuskhus,
1/2 spoon coriander pd,
2 spoon coriander fresh leaves,
1/2 cup onion chop,
1/2 jeera roast and crushed,
oil for shallow frying,
salt as per taste,
1 spoon of oil for tadka,
2nd masala**
half onion chop,
few coriander leaves,
few mint leaves,
2green chillies,
salt a pinch or adjust as per taste,
chaat masala a quarter spoon,
1/4 red chilies pd,
1/4 garam masala,
half lemon juice.
METHOD
Soak soyabean and channa dal separately for 1hr.
In a pan, put oil,jeera , garlic ginger paste,pepper crushed,onion chopped, saute for 2 min.
Now add soaked ,drained soyabean and channa dal stir cover the lid to pan and slightly cook or steam it on low gas.Now add coriander,elachi pd, soaked khuskhus coriander pd.Mix well and cool at room temp.
When cool at room temp.. grind coarsely and remove it in bowl now add half onion, coriander fresh leaves,
mint few leaves , chop green chillies, salt , chaat masala,red chilli pd, garam masala, half lemon juice.
Besan and cornflour for dusting...
Check the seasoning...
Make a small or medium tikki or kababs roll on with besan and cornflour mixture,then shallow fry on med hot oil.
Serve with pudina chutney.
