Malwani Chicken Curry
Ingredients:
8 chicken pieces
1 cup fresh coconut grated
2 onions chopped
3 tablespoons Malwani Masala
1 teaspoon good quality chili powder
1/2 teaspoon haldi
2 teaspoons garam masala
10 tablespoons each of garlic-ginger paste
6 tablespoons oil of cooking oil Salt to taste
Method
Marinate the chicken pieces in the garlic-ginger paste for 45 minutes. Heat oil in cooking vessel and lightly sauté the coconut & onion until light brown.
On cooling grind the coconut and onion to a fine paste.
Heat oil in a heavy-bottomed pan Sauté chopped onions on medium heat till they are light brown in color Add malwani masala, garam masala, red chili powder, haldi and fry for a 2 minutes.
Add the marinated chicken pieces, mix well with the masala.
Fry on medium heat for about 10 minutes or till they are lightly browned Add just enough water to cover the chicken pieces, add salt to taste and stir well.
Let the chicken cook well on low heat for about 30 minutes.
