Indo Chinese Schezwan Veg Fried Rice
Ingredients
Rice - 1 cup ...
Onion - 1 medium size (chopped)
Veggies of your choice - 1/2 cup
( Grated Carrot, Finely choped beans, boiled peas and corn,
shredded cabbage, small broccoli florets etc)
Green Chillies - 2 to 3 (slit into half)
Salt to taste
White Pepper Powder - 1/2 t.sp (optional)
Spring Onion Greens - a handful
Oil as needed
Ingredients

Green Chillies - 2 to 3 (slit into half)
Salt to taste
White Pepper Powder - 1/2 t.sp (optional)
Spring Onion Greens - a handful
Oil as needed
>> Schezwan Sauce <<
10 Dried Whole Red Chillies
1 tblsp Seasame Oil or Any Oil
1 tsp sugar
3 tblsp Vinegar
1 tblsp finely chopped Garlic
1 tsp salt
1 tbsp tomato sauce
Method
> First prepare the sauce. Soak the dry red chillies for 6 – 7 hrs. Remove the water. In a blender make a fine paste of the soaked red chillies and garlic. You may use 1 tblsp of water to make a smooth paste.In a glass bowl make a mixute of dry chillies paste, sesame oil, sugar, vinegar, chopped garlic, salt a pinch - checked later n add if needed),tomato sauce.
Keep this aside.
>Wash and cook the rice till it is 90 percent done. Add about 1 tb.sp of oil and some salt to the rice while cooking.
Transfer it to another vessel and allow it to cool. Heat a fry pan, pour some oil in it. When the oil is hot toss in the onions and green chillies. When the onion becomes translucent add in the veggies and saute it till the veggies are almost done.Salt a pinch for veggies When the veggies are almost done add the white pepper powder and mix well. Then add the 2 .-3 tblsp of already prepared schezwan sauce.
•Add cooked rice, checked salt and ajinomoto. Mix well .
Cover and cook on low flame, stirring in between for about 2 to 3 minutes.
In the end add the spring onion greens and mix well. Serve hot .
** Notes **
» Salt - be careful while adding salt. Schezwan sauce already has salt in it. Mine cooked rice also has salt.
» Vegetables – you can use your choice of veggies like add colored bell pepper, baby corns, beans, bean sprouts. Add as per your liking taste.
