Biscuit Custard Raspberry Pudding



Unique pudding - fruits mixed in custard and spread over powdered biscuit layer and topped with jelly..


Ingredients

Marie Biscuits broken 15-20
Butter 1 tablespoon
Brown sugar 1 tablespoon
Raspberry jelly or any jelly crystals4-5 tablespoons
Custard powder 4-5 tablespoons
Milk 1 litre
Powdered sugar 2 cups
Fruit ( grapes, Mango, banana and apple etc) finely chopped 1 cup
Black grapes 6-8 Green grapes 6-8

Method

Heat water in a non stick pan. Coarsely grind together biscuits, butter and brown sugar in a mixer jar and transfer into a bowl
Spread a layer of the biscuit mixture in individual cups and press lightly.
Place raspberry jelly or any jelly crystals in a bowl, add a cup of hot water and stir till the crystals dissolve. Keep aside to cool.
Boil milk in a deep non stick pan. Mix custard powder in 2-3 tbsps water and add to boiling milk. Cook, stirring continuously till it thickens.
Add powdered sugar and mix. When cooled , add fruits to the custard and mix well. Spread the fruits layer over the layer of biscuits.
Spread raspberry jelly over it. Set in the refrigerator, cool and serve.
