Spinach Feta Samosa

Spinach  Feta  Samosa

Ingredients

Spinach leaves blanched and chopped 2 medium
Crumbled feta cheese 1/2 cup
Samosa pattis 8-10
Butter 2 tablespoons
Garlic chopped 1 tablespoon
Onion chopped 1 medium
Sprigs of thyme 3-4
Red chilli flakes 1 teaspoon
Salt to taste
Raisins 2 tablespoons
Cashewnuts chopped 2 tablespoons
Refined flour (maida) 2 tablespoons

Method

Preheat oven to 180º C.
Heat butter in a non-stick pan, add garlic and onion and sauté till onion turns translucent.
Add spinach leaves and sauté for a minute. Add thyme, red chilli flakes and salt, mix well and sauté for a minute.
Add raisins and cashewnuts and mix well. Remove from heat and cool down to room temperature. Add feta cheese and mix well.
Take the flour in a bowl, add sufficient water and mix well into a thick paste.
Place each samosa patti on the worktop and rub it lightly with the flour paste. Place a small portion of the spinach-cheese mixture at one end and fold into a triangular samosa. Seal the edges by applying the flour paste and then pressing gently.
Place samosas on a baking tray, keep the tray in the preheated oven and bake for eight to ten minutes, turning them a few times.
Serve hot with tomato ketchup or green chutney.
