Khajur Halwa

Khajur Halwa

Ingredients

30 no. dried dates
½ litre milk
½ cup sugar
1 tbsp ghee
3 to 4 tbsp chopped nuts (cashews, walnuts, pistachios, raisins)
1/4 tsp cardamom powder
2 tbsp sliced almonds and chopped dates (for garnishing)

Method

Remove the seeds from the dates, wash with water and place them in a bowl.
Add milk and let the dates soak for about half an hour.
Transfer the dates-milk mix to a pan and bring to a boil. Continue cooking till most of the milk has evaporated and the dates have turned soft.
Allow this to cool down completely and grind to a fine paste.
Heat ghee in a pan and add the chopped nuts. Roast till they turn golden and set aside in a plate.
Add the pureed dates mix to the same pan and add sugar.
Mix well and cook for about 5 minutes.
Finally add the roasted nuts and cardamom powder and mix well.
Cook for 2 or 3 minutes and switch off the gas. Khajur halwa is now ready.
Transfer the halwa into bowls, garnish with sliced almonds and chopped dates
and serve hot or cold. If you are serving it cold, then allow it to cool down and refrigerate for at least 2 hours.
