Caramalized Vegetable Sandwich In Footlong

Ingredients

Caramelized onions ¼ cup
Red bell pepper roasted and deseeded 1 medium
Yellow bell pepper roasted and deseeded 1 medium
Green capsicum roasted and deseeded 1 medium
Footlong bread 1
Butter 3 tablespoons
Garlic finely chopped 1½ tablespoons
Garlic cloves 4
Fresh rosemary sprig 1
Fresh oregano sprig 1
Fresh thyme sprig 1
Balsamic vinegar 2 teaspoons
Salt to taste
Crushed peppercorns a pinch
Mayonnaise 4 tablespoons
Lettuce leaves 5-6

Method

Horizontally slice footlong bread without cutting through. Press the base a little with fingers.
Spread 2 tbsps butter on the base.
Spread garlic on base, cover and roast in oven for 2-3 minutes.
Cut red and yellow bell peppers and capsicum into thick juliennes.
Heat remaining butter in a non-stick pan. Slice garlic cloves, add to the pan and sauté.
Add pepper and capsicum juliennes, rosemary, oregano and thyme and toss.
Add Balsamic vinegar and toss well. Add caramelized onions, toss and sauté well.
Add salt, crushed peppercorns and mix well.
Remove bread from oven. Open cover and spread 2 tbsps mayonnaise each on base as well as inside
of upper cover. Place torn lettuce leaves on base and top with cooked vegetables.
Cover, cut into 4 parts and serve immediately.
