Zafrani Malai Paneer Tikka
Ingredients:
Paneer - 1 kg
Salt to taste
White Pepper Powder - 1 tsp
Lemon Juice - 1/2 cup
Cheddar Cheese - 100 gms
Cream - 4 tbsp
Green Chillies - 3, deseeded, chopped
Saffron - a pinch
Oil for basting
Method:
1. Cut paneer into 20 even sized cubes.
2. Apply salt, pepper and lemon juice and keep aside for 15 minutes.
3. Grate cheddar cheese in a bowl.
4. Whisk in the cream to make a fine paste. Add green chillies.
5. Soak saffron strands in 30 ml hot water for 10 minutes.
6. Add to the cream mixture.
7. Drain the Paneer cubes and marinate in the cream mixture for 45
minutes.
8. Skewer the Paneer and roast in a preheated oven at 135C/275F for 12
minutes, basting occasionally.
9. Serve with green salad and chutney.
