Crispy Lobia Vada


 Crispy Lobia Vada

Ingredients 
 
Lobia - 1 cup (soaked in water for 8-10 hours)
Spinach - 1 cup (finely chopped)
Onion 1 chopped
Green coriander - 2-3 tbsp (finely chopped)
Salt - 1 tsp
Red chilly powder - ¼ - ½ tsp
Coriander powder - 1 tsp
Green chilly - 2-3 (finely chopped)
Ginger - 1 inch piece (grated)
Asafoetida - 1-2 pinch
Oil - to fry vada’s

Method
Grind soaked lobia seeds in mixture grinder coarsely. Take out the grinned lobia in a bowl and add
coriander powder, salt, red chilly powder, ginger, green chilies, green coriander powder, asafoetida
powder and spinach. Mix all ingredients nicely. Mixture for making lobia vada is ready
Heat oil in the pan. Take little amount of mixture (lemon size) in your hands and make a round ball out
of it. Place the vada in oil. Place as many vada’s as possible at one time in the pan and cook on medium
flame until they get golden brown color. Take out the fried vada’s on a plate.
Prepare and fry all vada’s like wise.
Hot and crispy lobia vada’s are ready. Serve with green coriander chutney, tomato sauce or kasundi.
