Rice Kheer
Ingredients
1 cup basmati brown rice (washed and
drained)
2 cups of milk
2-3 cups of water
1 tbsp ghee
3-4 cardamons powder
3 tbsp almonds
2 tbsp pistachio
1 tbsp raisin (optional)
4-5 tbsp sugar or as desired
Soak brown rice for 60 minutes
Cook soaked rice with 2 cardamon pods till slightly mushy
Chop Almonds and Pistachio nuts
Method
In a warm non stick pan, add ghee and remaining cardamon pods
Once cardamon pods start to ‘sizzle’, add chopped almonds and pistachio nuts. Allow nuts to change color
Add sugar, and allow to caramelize while stirring
Add cooked rice and mix well
Add milk and cook until milk is absorbed. Stir occasionally so that rice does not stick to the pan.
Remove from fire, Kheer can be served hot or cold.
